Ingredients for 6 servings:
- 200g (7oz) sugar,
- 6 eggs,
- 125 g (4oz) almond powder,
- 125 g (4oz) hazelnut or walnut powder,
- 1 tablespoon pure cocoa powder (type Van Houten),
- 1 pinch of salt,
- butter and flour for the mold,
- 1 tablespoon powdered (icing) sugar

Preparation Steps:
1. Preheat oven to 180°C (350°F).
2. Separate the egg whites from the yolks.
3. In a bowl, whisk the egg yolks with the sugar until the mixture whitens.
4. Add the almonds and hazelnuts and cocoa powder. Mix well to obtain a paste.
5. Beat the egg whites until stiff with 1 pinch of salt. Using a wooden spoon, stir gently and little by little the whites to the above mixture.
6. Butter and flour a 24 cm round mold. Pour in the dough and bake for about 30 minutes.
7. Let cool and sprinkle with icing sugar.
