Croute Au Mont d'Or
This cheese, in its original wooden box, is melted in the oven with some wine incorporated in its middle. It is served with potatoes, Charcuterie (cold cuts) and green salad.

The richness of the melted cheese often calls for a rather light and neutral white. While Jura wines are renowned for their strong character, a Côtes du Jura Chardonnay, in a relatively light style without oak aging, will do nicely. A Bourgogne Aligoté or an easy drinking Alsacian Sylvaner are also most welcome.
